• 2 tablespoons coconut oil
• 1 small yellow onion, chopped
• 4 cloves garlic, chopped
• 1 can of coconut milk
• 2 cups vegetable broth
• 2 large yams
• 2 tablespoons fresh ginger, grated
• 2 tablespoons fresh coriander, chopped
• 1 teaspoon curry powder
• 1 teaspoon ground cumin
• 1 teaspoon cumin seeds
• 2 tablespoons smooth almond butter
• Himalayan salt to taste
Preparation:
1. Preheat the oven to 400 degrees Fahrenheit. Place yams on a baking sheet and bake for 45 min or until soft. Remove the skin.
2. Heat coconut oil in a pot over medium heat. Add onion, garlic, ginger, cumin seeds, cumin, curry powder, and sautéfor a few minutes while stirring often. Allow to cool down.
3. Put yams in a blender, add vegetable broth and onion-garlic-ginger mixture, and blenduntil smooth.
4. Return blended yams to the pot, add coconut milk and salt, mix well and slowly bring to aboil. You will need to cover the pot during this time as the soup will “spit”.
5. Mix in almond butter and simmer for 5 more min stirring often until almond butter is completely mixed and dissolved.
6. Sprinkle with fresh coriander, and serve.
Cooking Tips:
Let the soup simmer gently. This helps in blending the flavors beautifully.
If you prefer a creamier texture, blend the soup until smooth. For a chunkier version, blend only half and mix it back in.
A sprinkle of roasted almonds and fresh herbs can add a delightful crunch and freshness to the soup.
