Make Your Gut Happy with this Delicious Salad

This is one of my fave salads, easy to make, delicious, and so good for your gut!
This salad is full of probiotics and prebiotics, which are important for gut health. By consuming both probiotics and prebiotics, we can support the growth of healthy gut bacteria and improve our overall digestive health. Well, if you read my book, you already know that! And now I'm happy to share this recipe with you.
Ingredients:
Sauerkraut - 200 g; Beets - 2; Potatoes - 4; Carrot - 2; White Beans - 160 g; Onion - 0.5; Pickles (in brine) - 2; Olive oil - 40 ml; Black pepper - to taste. Use only "live" sauerkraut and "kosher" pickles as they contain probiotics; you can find them in the refrigerated section of your grocery store.
Preparation:
Steam or boil beets and carrots; bake or boil potatoes; cool down and peel them - or not! I always peel beets but not carrots and potatoes; cut beets, carrots, potatoes, pickles into small cubes. Peel the onion and chop very finely. Rinse canned beans. Combine all ingredients in a large bowl: potatoes, carrots, beets, pickles, onions, sauerkraut, beans; add pepper and olive oil and mix well. You can also add chopped dill and/or parsley.
You can serve it as a main course for lunch or dinner. Perfect for vegetarians and vegans.
